Deep Dish Apple Pie

Ingredients

  • 2-1/4 lbs. apples\cooked, peeled and sliced
  • 1/2 cup quick cooking tapioca
  • 2 Tbsps. lemon juice
  • 2 tsps. cinnamon
  • 1-1/3 cups sugar
  • 2-1/4 cups all purpose flour
  • 1 tsp. salt (necessary)
  • 3/4 cup butter flavor shortening
  • 1/4 cup plus 2 Tbsps. iced water

Instructions

Combine apple slices, tapioca and lemon juice in a 9x13 inch glass baking dish. Stir in cinnamon, 1-1/4 cup sugar and a dash of salt. Let stand 15 minutes to soften tapioca, stirring occasionally. Meanwhile, mix flour and salt in another bowl. Cut in shortening until it resembles coarse crumbs. Stir in ice water lightly with a fork until dough just holds together.

Preheat oven to temperature 375°F. Shape dough into a 5x7 inch rectangle. Place on a lightly floured work surface and roll out to about 10x14 inch using a floured rolling pin. Place dough over apples. Trim edge, leaving at least 1 inch overhang. Fold overhang under and make a fluted edge. Cut 3 slits in crust. Brush top of crust with water and sprinkle with remaining sugar. Bake 55 minutes or until bubbly and crust is golden. Cool on wire rack.

Apple Walnut Bread Pudding

Preparation Time: 15 minutes

Cooking Time: 50 minutes

Ingredients

  • 1/4 cup unsalted butter
  • 2 slices French bread, cut into 3/4 inch cubes
  • 3/4 cup brown sugar, firmly packed
  • 1/2 cup water
  • 1/2 tsp. cinnamon
  • 2 Jonathan or Macintosh apples, peeled, cored and finely diced
  • 3 oz. Gouda cheese, cut into cubes
  • 1/4 cup chopped walnuts

Instructions

Preheat oven to temperature 350°F. Melt half the butter in a baking dish. Add bread cubes and stir until butter is absorbed. Bake 15-20 minutes or until golden, stirring occasionally. While bread is baking, combine brown sugar, water and cinnamon in a heavy saucepan. Simmer over medium high heat 5 minutes or until sugar dissolves. Remove from heat and stir in remaining butter. Set aside. Add apples, cream cheese, and walnuts to baking dish. Pour reserved syrup over mixture and bake 35-40 minutes.

Garden Vegetable Stuffing

Preparation Time: 20 minutes

Ingredients

  • 1-2/3 cups chicken stock
  • 3 cups mixed vegetables, a combination of broccoli florets, sliced carrots, cauliflower florets and sliced celery
  • 4-1/4 cups seasoned stuffing mix

Instructions

Preheat oven to temperature 350°F. Boil stock and vegetables over medium high heat. Reduce heat to low. Cover and cook 5 minutes or until vegetables are tender-crisp. Remove from heat and add stuffing. Mix lightly. Spoon into a 1-1/2 quart casserole. Bake 20 minutes or until hot.

Very Berry Cranberry Sauce

Preparation Time: 5 minutes

Cooking Time: 15 minutes

Ingredients

  • 1-1/2 lbs. fresh cranberries, rinsed and drained
  • 1-1/4 lbs. fresh strawberries
  • 1/2 cup sugar
  • 1/3 cup Grand Marnier or orange juice
  • 1/2 cup orange juice
  • 1/3 cup water
  • 2 Tbsps. orange peel, grated
  • 3/4 cup walnut pieces

Instructions

Combine all ingredients in a large Dutch oven and bring to a boil over high heat. Reduce heat to low and simmer 10-15 minutes until slightly thickened, stirring occasionally to crush berries. Remove from heat. Let cool briefly. Cover and chill. Stir in walnut pieces before serving.

Pine Nut Mashed Potato

Preparation Time: 10 minutes

Ingredients

  • 4 medium old potatoes, peeled and each cut into 4 equal pieces
  • 1 oz. butter
  • 1/4 cup milk
  • 1 tsp. sugar
  • 2 oz. pine nuts, toasted
  • 2 tsps. fresh rosemary, chopped

Instructions

Place potatoes in a steamer basket over boiling water. Cover pan and steam 10 minutes, or until tender. Drain. Mash well with potato masher or fork. Add next 3 ingredients; beat until butter is melted. Add last 2 ingredients to mashed potato, mix well.

Preparation Time: 5 minutes

Ingredients

  • 1 can cream of mushroom soup
  • 1/2 cup skim milk
  • 1 tsp. soy sauce
  • 1/8 tsp. pepper
  • 4 cups canned green beans
  • 3 oz. French fried onions

Instructions

Preheat oven to temperature 350°F. Combine first 5 ingredients and half the onions in a 1-1/2 quart casserole dish. Bake 25 minutes or until hot. Stir and sprinkle with remaining onions. Bake 5 minutes or until onions are golden.

Balsamic Broccoli with Tomato and Garlic

Preparation Time: 10 minutes

Cooking Time: 15 minutes

Ingredients

  • 1-1/4 lbs. broccoli florets\cooked
  • 1 Tbsp. virgin olive oil
  • 1 tomato\cooked, seeded and chopped
  • 1 clove garlic, minced
  • 1/8 tsp. chili pepper flakes
  • 1 Tbsp. balsamic vinegar
  • 1/4 tsp. lemon zest
  • 2 tsps. lemon juice

 

Instructions

Place broccoli in a steamer basket over boiling water. Cover saucepan and steam 5-7 minutes or until tender. Drain broccoli and return to saucepan. Set aside and keep warm. Heat oil in a heavy saucepan over low heat. Stir in tomato, garlic and chili pepper. When hot, whisk in remaining ingredients and salt and pepper to taste. Pour over broccoli and toss.

Sweet Potato and Pumpkin Casserole

Preparation Time: 10 minutes

Cooking Time: 1 hour

Ingredients

  • 2 cups canned sweet potatoes
  • 2 cups canned pumpkin
  • 4 eggs, beaten
  • 1 cup coconut milk
  • 3/4 cup sugar
  • 1/4 cup rice flour
  • 3 Tbsps. unsalted butter
  • 2 tsps. ground cinnamon
  • 3/4 tsp. ground cloves
  • 1/4 tsp. salt

Instructions

Preheat oven to temperature 350°F. In a bowl, thoroughly combine sweet potato and pumpkin. Mix in remaining ingredients; combine until smooth. Transfer to a 9x13 inch baking pan. Bake at temperature 350°F for about 60 minutes. Let cool before serving.

Tasty Carrot Bread

Preparation Time: 25 minutes

Ingredients

  • 1/4 lb. unsalted butter or low calorie margarine
  • 1/2 cup Turbinado, or Molasses cane sugar
  • 1 large egg
  • 1-1/4 cups flour
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 1/4 tsp. Frontier Sea Salt
  • 1 Tbsp. water
  • 1 Tbsp. fresh lemon juice
  • 1 tsp. Frontier Vanilla Extract
  • 1 cup carrots\grated

Instructions

Directions: Preheat oven to temperature 350°F. In medium bowl combine the flour, soda, baking powder and salt. Set aside. In bowl of electric mixer, cream together butter and sugar. Add the egg and mix well. Add the water, lemon juice, Frontier Vanilla Extract, and grated carrot and mix well. With mixer on low, gradually add the dry ingredients and mix to thoroughly combine, stopping the mixer occasionally to scrape down the bowl. Pour into a well greased ring mold or two medium bread pans and bake until tester inserted in bread comes out clean, with no wet batter clinging to it, approximately 40 minutes.

Parmesan Zucchini

Preparation Time: 7 minutes

Cooking Time: 18 minutes

Ingredients

  • 2 tsps. olive oil
  • 1 clove garlic, minced
  • 1 tsp. basil, or 1 Tbs. fresh, minced
  • 1 tsp. oregano, or 1 Tbs. fresh, minced
  • 1 tsp. thyme, or 2 tsp. fresh, minced
  • 5 tomatoes\cooked, cut into thin wedges
  • 1/4 cup vegetable stock or water
  • 1-1/2 lbs. zucchini\cooked, thinly sliced
  • 1/4 tsp. salt (optional), or to taste
  • 2 cups shredded mozzarella cheese
  • 2 Tbsps. grated Parmesan cheese

Instructions

Preheat oven to temperature 400°F. Heat oil in a heavy nonstick skillet over medium heat. Sauté next 4 ingredients 1 minute. Add tomatoes and sauté 4 minutes. Stir in stock and zucchini. Cover skillet and simmer 3 minutes or until zucchini is almost tender. Drain excess liquid from skillet. Season with salt and pepper to taste. Stir in half the mozzarella and half the Parmesan. Transfer mixture to a lightly oiled baking dish. Sprinkle with remaining mozzarella and Parmesan. Bake 10-15 minutes or until cheese is melted.
